Sweet potato chili. Or yam chili, I'm not sure which. It goes like this:

2 medium onions, chopped.
3 garlic cloves, minced.
1 sweet potato, cubed.
1 tsp cumin
1/4 tsp cinnamon
Saute all the above in oil for a while, letting the sweet potato & onion get cooked.
Add 2 28-oz cans of diced tomatoes, and 28 oz water.
Add 2 cups of beans (e.g., mixed, black & red kidney).
1/2 tsp salt
~1/2 tsp chili powder
~1/2 cup canned chopped jalapenos
Bring it all to a boil.
Add 12 oz frozen veggie crumbles (fake ground beef)
Simmer for about an hour.
Serve with grated cheddar & saltines.

It doesn't taste as chili-ish as some chilis, but it has a subtle flavor that I really like. And this recipe makes a ton, so half of it goes in the freezer. I need lots of things in my freezer.
