I made this up yesterday. It works.
8 oz feta cheese, crumbled
2 organic tomatoes, sliced (it's not worth it if the tomatoes aren't good)
1 medium onion, sliced
1 medium zucchini, sliced
about 2 T olive oil, more if needed
fresh oregano
Saute onions in oil until almost brown. Throw in zucchini, saute all until onions are fully brown.
Mix together tomatoes and feta in a casserole dish. Scatter 1 tsp fresh oregano on top, or basil if you prefer. Layer the onion-zucchini mix on top. Bake in the oven at 350, if your oven will go that high, for 20 minutes or so to warm it up. Serve over matzah.
