What's in the fridge enchilada casserole:
layer about half a can of enchilada sauce
corn tortillas
cooked brown rice mixed with salsa
black beans mixed with cumin and chili powder
cooked diced potatoes mixed with salt and chili powder
shredded cheese
diced onion
torn up kale
corn tortillas
enchilada sauce
shredded cheese
Cook at 350 for 20 min. Add more cheese on top. Cook another 10 min.

It came out really well--sauté the onion first though. :)
