Why is it that all southern recipes have to involve a ham hock and/or bacon? I know they taste good, but come on! Can it really be that hard to come up with a vegetarian recipe?

I'm trying to figure out what to do with black-eyed peas and okra. I guess throw them in a can of tomatoes, rice and some salt and call it dinner.

When I found this in a recipe for corn chowder I put in some facon strips and they worked fine. Beef bouillon will probably do the trick for "ham."

Maybe you can go down to your local Whole Foods and get soy hamhock. :P

Or maybe veggie chitlins.

Amusingly, the post right above yours on my flist is a vegan complaining that he can't find anything to eat at this academic dinner he's going to in New Orleans. When I lived in Texas, I decided that Southern food is just not for vegetarians. They flavor everything with salt and dead pigs. If you take out the meat, there's nothing there.
