I'm making saag paneer. Observations:

I need a much bigger dairy skillet. If I put one more drop into the one I have, it's going to overflow.

Paneer is hard to cut. Indian cooks must be very strong.

This dish could probably be made in the crockpot with ease. I had to make garam masala from scratch, so this batch of saag is more labor intensive than future ones will be, so if it turns out well, I will be ecstatic to have a new crock pot recipe.

Huh. We've made paneer a fair number of times and never had it be that hard to cut.

I bought it from the farmer's market. I've never made my own, but I would imagine it would come out softer that way.

It's not hard with a good recipe. Lemon juice and whole milk and some cheesecloth. Worth trying.
